Question about minimum voltage Lipo battery

Hello everyone,
I'm relatively new to the RC hobby. I myself drive an Arrma Notorious with 5000mAh 2s. The speed controller manages to switch off very well before the lipo drops below 3v per cell and the batteries are actually "empty" when I put them on the Sky charger. I got this set for my son: Wltoys-144001
I don't trust the speed controller to handle the battery correctly here, so I got a beeper. If I set the warning to 3.2v in the beeper, the battery still has 3.8v and almost 40% capacity after the warning on the beeper and on the charger at home. Can I confidently go further down with the warning voltage here in the beeper, i.e. below 3v to 2.8v or is the beeper scrap or should I trust the vehicle and omit the beeper. Don't want to screw up the batteries. But possibly. Are they scrap? What do you say?
